Approved Sanitizers for Food Service....
A list of approved sanitizers and their concentrations.....
- Iodine 12.5 ppm.
- stains linoleum and some other types of flooring
- Chlorine (bleach) 50 ppm.
- can damage hands, uniforms, metals and rubber or leave an odor when used at
too high a concentration
- very reactive with other cleaning compounds and can produce a toxic gas
- scented or oxygenated types are not allowed in food service
- must be phosphate free
- Quaternary Ammonia (quats) 200 ppm.
- used in water with a 500 ppm or lower hardness factor
