Grades - Classifications of foods by a descriptive term or a number, to ensure uniform
quality and to give an indication of desirable use. Similar characteristics in foods such as
visual appearance, color, uniformity of size, degree of ripeness, and wholesomeness.
Packer Grades - grades established by branded packers that give an indication of desirable
use. These grades are not considered as objective as government grades.
Purchasing Specification - A document that accompanies a bid request and specifies
product standard of identity, grade level, pack, special instructions and other pertinent
information. Simple forms of the document can second for purchase orders.
Yield is the usable portion of a food product
Usable wt original wt. = usable % of original wt.
